Big, impersonal, poor food, not value for money.

Hotel Granbaita is marketed and priced as a luxury, five-star Dolomites experience. It is not and it represents very poor value for money.
From the outset, the accommodation felt substandard. The bed linen and toilet paper were both extremely rough, bordering on hostel quality. We raised this directly with staff and asked for it to be remedied; no one followed up and nothing changed. For a hotel charging at this level, basic comfort should not require repeated requests.
The hallways and interiors are deeply uninviting. Long, narrow corridors resemble a hospital rather than an alpine retreat, a feeling reinforced by harsh lighting and worn carpets that genuinely recall The Shining. There is no warmth or cohesion in the design. Instead, the hotel is filled with odd, randomly dispersed sculptures and artwork that add to the sterile, impersonal atmosphere rather than elevating it.
The spa area smelled unpleasant, and instead of addressing the underlying issue, the hotel seemed to mask it with an overpowering, synthetic cologne — the same scent was sprayed into guest rooms, making the problem worse rather than better.
The hotel’s size is clearly part of the problem: it is far too large to deliver the attentive service and intimacy one expects in the Dolomites. Despite booking well in advance, we were placed far apart, with no consideration given to keeping rooms together.
Food – the biggest disappointment
The dining experience was, frankly, unacceptable.
• Breakfast was mediocre at best: limited fresh fruit, dry pastries, and eggs that were inconsistent day to day.
• On one occasion we ordered overnight oats — the result was genuinely inedible.
• Dinner service was the low point of the stay. Protein courses were repeatedly poorly cooked and oddly paired with strange, baby-food-like purées (clearly visible in the photos).
• The antipasto buffet featured raw seafood left sitting out for extended periods, raising serious concerns about freshness and food safety.
• The so-called “dessert night” felt entirely mass-produced. Items appeared either shop-bought or prepared days in advance, lacking freshness, skill, or care. One night we were excited to order our beloved Kaiserschmarrn. What came out was 4 pieces of oily, flat, cold pancake. A complete disservice to the dish and cuisine.
What made this worse was the response when we raised concerns: waitstaff and management consistently dismissed feedback with “that’s just how it is.” This attitude is incompatible with a hotel positioning itself at the top end of the market.
Service
With the exception of the drivers and one waiter, service was poor. Staff were often dismissive, defensive, and uninterested in resolving issues. There was no sense of hospitality, warmth, or pride, qualities that define truly great alpine hotels.
Comparison matters
We stayed at Hotel Tyrol earlier on the same trip and had a wonderful experience. Warm service, excellent food, thoughtful design, and genuine hospitality. That contrast makes Granbaita’s shortcomings impossible to ignore.
Bottom line
Granbaita is too big, too impersonal, and too poorly managed to justify its pricing or five-star branding. Between the uncomfortable rooms, unpleasant smells, cheap furnishings, weak service, and consistently bad food, this hotel fails to deliver the experience one expects in the Dolomites.
We would not return and cannot recommend it to anyone seeking quality, comfort, or value.

We are truly sorry that your stay left you so disappointed. Your feedback has been taken seriously and, while difficult to read, we also see it as an opportunity to reflect and improve.
Hotel Granbaita is not a boutique hotel. Our identity is rooted in classic alpine hospitality, a wide range of services, and a structured five-star environment. We understand that this style does not meet every guest’s expectations and that personal taste plays a major role in perception.
At the same time, we do not see ourselves as an impersonal hotel. There is a family behind this property, along with a dedicated team working every day with care and pride. We understand if the atmosphere felt impersonal to you — that is never our intention.
Regarding the rooms: while you mentioned having booked well in advance, for one of the most requested periods of the year this is not considered an early booking from our operational perspective. The reservation was made in September for January, when only a few rooms of that category were still available. The two rooms were identical, one above the other on different levels, and among our newest rooms, fully aligned with five-star standards, even if not close to the reception area. When you asked to change rooms, we genuinely tried to find a solution, but unfortunately, due to full occupancy, no alternatives were available, which regrettably became a source of frustration for you throughout your stay.
Regarding comfort: we regret that our bed linen and toilet paper were not to your liking. We deliberately select high-quality products for every area of the hotel, and this is the first time we have received feedback of this kind. We usually receive many compliments specifically for the beds and their comfort, which have been chosen with great care.
About the corridors and interiors: they may appear simple and minimal by design. We do not share the interpretation that they feel cold or unsettling, but we acknowledge that design perception is highly subjective. The sculptures and artworks are part of collaborations with local artists. Many guests appreciate them, and we regret that they were not to your taste.
Regarding the spa, we acknowledge that there was a technical issue with the ventilation of one sauna, and although we tried to manage it as best as possible at the time, we are sorry that this caused discomfort during your stay.
Regarding the Food: We regret that the dining experience did not meet your expectations. Some aspects are inevitably subjective. Fresh fruit is part of our breakfast offering and is visible in the photos you shared. The overnight oats did not meet your expectations and we will do our best to improve. Dessert Night is entirely produced in-house with care and craftsmanship, as are our traditional dishes, including Kaiserschmarrn. We understand that the taste did not meet your expectations.
Regarding food safety, we must state clearly that all products follow strict HACCP procedures, and there is no compromise on hygiene, freshness, or safety standards.
We also regret that, despite several attempts to respond to your concerns, we were not able to satisfy you. If any communication felt dismissive, this is something we take seriously and will continue to improve — listening should always come before explaining.
We sincerely thank you for acknowledging the drivers and the waiter who met your expectations. We are grateful that at least part of our team was able to leave a positive impression.
We are glad that you enjoyed Selva and had a positive experience in another hotel. We will take some of your comments as input for continuous improvement. At the same time, we do not recognise ourselves in the image of being poorly managed or indifferent — but we respect that this was your perception.

Very good hotel with adequate service

Historic hotel in Selva Gardena, partly renovated with great taste in recent years, both in the common areas and in some suites. Large and pleasant lobby near the bar, beautiful restaurant, super ski room and ski rental inside the structure (not equipped with snowboards). The location is not 'walking distance from the main cable car Ciampinoi, but there is an efficient and friendly shuttle service; otherwise 200 m from the hotel there is a ski lift. Generally very good food, not excellent but the Easter evening only buffet, we would have liked a dedicated menu and a seated dinner. Spa large and equipped with several saunas and steam baths (room for improvement is needed on the aufguss). There is no entertainment room for young people and teenagers, and there is no snack or afternoon snack as befits facilities of the same standing. Prices in the very high range.

Ci dispiace, invece, che la proposta della cena di Pasqua non abbia suscitato il suo pieno interesse. La formula a buffet è stata una scelta precisa, pensata per offrire agli ospiti varietà, libertà di scelta e un’atmosfera conviviale in un momento speciale delle festività; comprendiamo tuttavia che avrebbe preferito un menu dedicato con servizio al tavolo, e la ringraziamo per aver condiviso con noi il suo punto di vista.

2nd time here and brought the family this time. They loved it. A special treat for them all. Loved every minute of our stay here. All the staff lovely and helpful as usual. Cocktails great Francesco, Mirko thank u again. Went beyond to help with everything. Food was lovely as always. Can’t wait to return next year.
