Great time
Typical local restaurant with a view of part of the kitchens. Very pleasant service and a very warm welcome. The dishes are delicious and the prices are fair. I particularly recommend the duck confit tatin-style quiche with its perfectly seasoned salad. The cassoulet is hearty and very good.

"Enjoy the Luxury Medieval Bishops Knew"
This is a charming hotel with a world class restaurant. Service and staff were excellent. Rooms a bit small. The property was once the residence of the bishops of carcassonne. The staff is attentive but discrete. I recall sitting in a very pleasant bar, which is really more of a study, and saying to my friend, "I'd like to have a drink." And suddently, a tuxedoed gentleman appeared and asked me what I would like.
There is also a very pleasant small library with old books in several languages, including English. And the location is right inside the city walls.
When we arrived, it was raining and dark, and a gentleman came out to open the gate so we could drive in and park in this old barn . Our small Renault found its place between an old Bugatti and a Bentley.
Because we were traveling in off season, there weren't alot of other clients at the hotel, and there were times when we felt like we might be in a scene from The Shining. But there wasn't a hint of terror, just a pleasant sense of history and mystery.
